Is there a way to configure when (how) a sprint can be closed?
We have the problem that sometimes a (sub-)task was rejected during a sprint, the parent task has been completed, but the sprint cannot be closed.
The workaround - setting the rejected ticket to Done, completing the sprint, resetting to Rejected is time-consuming and not nice.

The easiest thing to do is map your "rejected" status into the last column on your board. That's the only thing that matters to the sprint, the status itself is utterly irrelevant.
You can explain this to your people quite simply - an issue is "something that we need to do something about" and "rejected" is "done" because your team did something about it - they looked at it and said "no", so it's done.
Change the status category of your status "rejected", change it to a "Done" state (green).
I suspect it's currently a To Do or In Progress category state.
As it will be a done state, you can just close the sprint.
P.S. Do make sure the Rejected state is also in the last column of your sprint board
