Colour for select list (custom fields) in cloud version

I would like to add a background colour to the items added to my select list.

I'm using the Cloud version of Jira.

That is not possible with out-of-the-box Jira Cloud.  There have been many suggestions to add this over the years.  Here is an example suggestion which you may watch/vote for to see progress: https://jira.atlassian.com/browse/JRACLOUD-40779
