I am looking for a solution to collect filter usage. I tried to intercept the REST API call, but I could not find any information about the filters.
Do you have a solution to collect this information and extract statistics on filter usage?

What do you mean by "usage"?
Do you mean where filters are configured for dashboard gadgets, reports, boards etc? Or people have starred them (like bookmarks in a browser, to go back to)? Or people are running them?

Jira does not track that, you will need to look to the access logs to see when people are using the issue navigator.
