I installed the newest version of jira, now the product key is locked at that license. Only after I installed the newest version I noticed that it doesn't support Remote API anymore. But I need Remote API for an application I use. Is there any possibility to reset the license key to use with version: "v6.4.14#64029-sha1:ae256fe" ? The installation of the newest jira is already gone, I don't need the newest jira

A license key is not tied to a specific product version. With a license key for Jira Software, for example, you can install any version of Jira Software.

You can access the older Jira version files here: https://www.atlassian.com/software/jira/download-archives

Be very careful when rolling back an entire application upgrade. The same as you would carefully upgrade and test thoroughly, you will do the same with roll back:
