We have two field configuration schemes set up and assigned to various projects. We know realize we only need one. Is there a way to change the field configuration scheme accross multiple projects so we do not have to modify each project individually?

I don't think there is an option to do that.

Apart from using Script Runner and doing it from the Script Console. You should have scripting skils though.
