Did you create a Team Managed project or a Company Managed project? It will say at the bottom of the navigation pane on the left. Did you create a Software, Business, or Service project? That will be shown at the top of the navigation pane on the left just below the project name.
If you created a Team Managed Software project you will need to navigate to Project Settings (from the navigation pane on the left) and then Features. There you can turn on the Backlog and Sprint features. From Project Settings you can also select Issue Types and add the issue types that you want.
If you are using a Company Managed Software project, did you elect to use the Scrum template or the Kanban template? If you elected to use the Kanban template you cannot change the board to Scrum to enable Sprints. Instead you will have to create a new Scrum board associated with your project. And the addition of issue types is more complex.
If you created a Business project you will not be able to use Sprints, as that feature is not supported for that type of project. You would need to create a new Software project.
