Our canceled requests remain considered by the system as unresolved. How can I get that changed?

Hi,
You need to configure the workflow to have the "Resolution" field set.
Either you can do this on a transition screen to canceled, or set it to a default one via a post function.

https://confluence.atlassian.com/adminjiraserver/working-with-workflows-938847362.html#:~:text=A%20Jira%20workflow%20is%20a,represents%20processes%20within%20your%20organization.&text=Workflows%20can%20be%20associated%20with,by%20using%20a%20workflow%20scheme.

Look especially at the "Setting the resolution field" section
