I don't need my JIRA project more and want to cancel my JIRA subscription, BUT I want my projects and issues backed up offline. How do I make this happened?
you can perform a full backup and download/store locally. Excerpt from docs....
To create a backup for cloud:
You can tick the include addition files option if you want to include attachments, avatars and project logos.
After the backup is complete select Download backup file.
