Can you use variables for notification scheme emails?

We'd like to do the following:

• Keep our projects linked to the same notification scheme (not create a separate scheme for every project just to add an explicit email address notification).
• Add a notification for an email alias that includes the project name whenever issues are created on a project.
  • The notification would be defined as "{{project.name}}-watchers@domain.com".. E.g. if the project is named "foo", the notification  would send to "foo-watchers@domain.com". 

Is this possible? If not, can it be accomplished by some other mechanism (maybe using groups instead of an email alias?).

Currently, this is unfortunately not possible. However, in order to achieve your goal, I understand you can use Project Roles.

From the information you shared, I understand you want to notify different people, depending on the project, is that right?
The difference between project roles and groups is that for project roles, you define a set of people for each project, while in the groups, you define a set of people for the whole site - that means, in your case, you would need to create one group for each project.

To implement this, I suggest you add a new project role as mentioned on this page, then update your notification settings as mentioned here. In the 5th step updating the notification settings, you can select the project role you created.

This way, for each project, a different set of people will be notified, while in the notification scheme only one setting is configured.
