Hi, 

I am working on 4 to 5 projects in JIRA and I would like to see all the issues/stories we work in a sprint should be in 1 release in a way to track easily. Could some one help me in my situation?

Natively, cross-project releases are available in Advanced Roadmaps for Jira. Have a read at Create a cross-project release in Advanced Roadmaps

Releases and versions are otherwise exclusive to individual projects.
