Can we have more than one on-going sprint in a project?

Our project will deliver the same application on several mobile platform. Each application has been identified as a component in the project.
We would like to have parallel sprints (one for each component).

Yes. If you go to Administration, Applications, JIRA Software, you can enable parallel sprints globally in JIRA Software.
