Can we edit resolution fields specifically for a project instead of globally

I have a request from a client requesting that we trim down the number of resolution codes for a particular project. 

Checking the resolutions, it seems to be only configurable globally and not give me the option to add a new context.

Please let me know if there is a way to do so.

you sort of can but it isn't pretty and certainly falls into more of the advanced configuration category.

You can use the jira.field.resolution.include property for the transition(s) to your resolved status(es). In there you have to list the resolution IDs that you wish to include. For example it might look like the image below. The first trick is to determine the resolution IDs:

  1. go to Settings > Issues > Resolutions
  2. for each resolution you want to "include" for the project select "Edit"
  3. at the end of the URL you will see the ID, e.g. ...?id=10001

Using these IDs you will then edit the appropriate workflow(s) and associated 'resolve' transition(s) to add the property as show in the image.
