We have an existing workflow for Issue/Task. Can we create a separate workflow for Bug as we are tracking all the bugs in JIRA and moving out from ALM

Yes, create a new workflow, and add it into the project's "workflow scheme" - it will ask you what issue type(s) you want to use it for, so select "bug" there.
