For the past 2 days, I've continued to get a "We couldn't create the child issue - Check your connection, then give it another try" message whenever I try to create a child issue or a sub issue. Has anyone else received this issue? I've seen someone post something similar and was told to wait a day and try again. It's now been 2 days for me. Any help would be appreciated!

Not sure if you are hit with this bug - Cannot create child issue from Epic in new issue view when there is required field If yes, you can try the workaround mentioned on the bug to see if that helps.
If not, you can also raise a support ticket with Atlassian Support for faster resolution.
