Can no longer create sub task, a new issue

When I have created a Jira ticket

I attempt to create a subtasks however it no longer works

It says cannot create the subtask as description is required. Before now, when i would type any free text in, it would spin up a sub task automatically, however this seems to have stopped working and I cannot see why

Hello Gary, Good day. I believe the description field has been set to "required" recently or in workflow there is a validator for "description" field added recently. You can check the workflow and field configuration once to understand which one is configured for description field.
