I have a project that we no longer use but the issues are still referred to. I know I can create a board in another project to fetch issues from my old project. But will the issues still be visible/accessible even if I archive my old project?
Or, can you suggest some other way to do the same?

You can add a board to a project to display issues from another project. That is not a problem since a board is not much more than a visualisation of issues matching a filter.
But when you archive a project, the issues in that project are archived as well and will no longer be visible. A project is where issues are stored and issues can only be stored in one project, but displayed on many boards.
If you want to archive an old project, but keep the open issues available, you can either move the open issues into another (still active) project using bulk move and archive the old project afterwards. Or you can just keep the project open and move the closed issues into another project you use for archiving. Or you can just do nothing with the old project and keep working with it. Closed issues will not appear in your boards anyway.

Thanks for the response. I see what you are saying - I will move the issues to another related project but use a specific label to distinguish.
