I want to be able to spin up a channel for a specific item in Jira and use it for discussion.
When I try to connect from the Jira Cloud Slack app it links to the entire project and doesn't allow it to be for the specific item.

Supposing you are using the Jira Cloud for Slack (Official), you can filter the issues you want to display a specific issue by using JQL queries. These would be the steps:
- Configure your Slack to a JIRA project in a Slack Channel
- Then, click on Change under the notification in the Slack channel:
- Then. Click to switch to JQL and describe the issue key you want to receive notifications, like:
key = abc-123

It would be great if we could link it directly from Slack. Is that something in the works or an enhancement we can submit?

I was not able to find any suggestions been worked right now to configure the filters directly from Slack, however, I gave myself the freedom to open a new one, since I also think this would add a good functionality in this integration:
Ability to configure JIRA notification filters directly from Slack
Feel free to vote and watch the suggestion to increase its priority and also receive notifications about any updates. Additionally, you can add a new comment if you have anything to add in the suggestion.
