As a project coordinator and specifically in daily scrum meetings, I want to show my colleagues the board and give an overview - grouped by assignees, and sorted with both their tasks and sub tasks, so it's possible to see everyone's tasks and sub tasks at the same time.
At the moment I have two lesser well options:
I can press "group by" (right upper corner) --> "sub tasks", but then I cannot see/sort them in assignees nor task.
The other thing I can do is "groups by" --> "assignee", but then I can only see their tasks and not their sub tasks.
I dont know how to customize filter or JQL, but this might be an option? I looked on youtube, but others Jira looked a bit different. Mine looks like this:

From your description and screen image I believe you are working with a Team Managed project. For Team Managed projects the only way to show Subtasks on the board is by using the Group By option set to Subtasks. If you don't use that Group By option, you won't see the Subtasks on the board.
When you use that Group By option, then the parent of the subtask is displayed a a header line rather than a card. There is no option for displaying both issues and subtasks as cards in a Team Managed project's board.
The issues are sorted on the board based on their Rank. In a Team Managed project board there is not option to change the sort order of the issues.
Boards already have a built in feature for filtering based on the Assignee of the issues. Click on an Assignee's avatar at the top of the board to see only the issues assigned to that person.
The bottom line is that with a Team Managed project you will not be able to show both the subtasks and group issues by assignee. You can show the subtasks, using the Group By option, and filter by assignee.
As an aside, in a company-managed project, you have the option of setting Swimlanes by Assignee, and you can see both tasks and sub-tasks in that view.

Yes it is a Team Managed project I was refering to.
I thought that there would not be an option for my inquiry. I hoped that there was possibility to create your own filter with assignee, tasks and sub-tasks.

Would there be a big difference if i change from team managed to company project? At the moment we are only a small IT department (approx. 8 people) and a couple of product owners that send requests to the backlog.

@Fuji Unfortunately I'm not an expert on team-managed projects. I know that company-managed projects are more mature than team-managed, and provide more flexibility, but I don't have enough experience with team-managed to be able to explain the differences in detail.

Something that you might investigate is what you can do with creating a board from a saved filter, before you consider changing the project type.
With Team Managed projects a board is created for you automatically and you can't change the underlying filter of the board (which also controls the sort order of the issues).
However, you could create a Saved Filter for the project, and then create a board from the saved filter. That board would function the same way that boards for Company Managed projects work. That would enable you to experiment with changing the ORDER BY clause for the filter, and also maybe give you a feel for the capabilities of the board you would work with for a Company Managed project. Refer to this article for more information about making additional boards.
On the topic of differences between the project types, the major difference between Company Managed and Team Managed projects concerns customizations. For a Team Managed project the Project Administrator has the ability to implement customizations - custom fields, custom workflow, custom issue types. For Company Managed project only Jira Administrators can create the projects and only Jira Administrators can make changes to the workflows, add custom fields, change screens, and so on.
The methods for managing those customizations are significantly different also.
