Can I mutli-select issues and key-press a to assign them all simultaneously rather than going through the long process of bulk edit?

Currently if you multi select issues, and keypress "a" to edit the assignee it only assigns the final issue you selected. A better UI behavior would be for all the selected issues to get assigned the new assignee. This would be much simpler and faster than bulk-edits

As you said yourself this is not possible right now. You could request this as an improvement here: https://jira.atlassian.com/secure/Dashboard.jspa

You could also get the JExcel plugin which would allow you to assign in an excel like format.
