I have a new Sprint and I need a way to document teh results of the closed issues. Can I create a log or documentation through confluence for each ticket that I close?

Welcome to the Atlassian Community!

All sprints are scrum artifacts, by definition, so I am not sure what you mean by "sprint that is not a scrum"

You can document almost anything you want from your Jira issues in Confluence, by drawing in the Jira gadgets and using the Jira macro.  So yes, you can log everything you close in Confluence.  It's not uncommon to see Confluence pages that have "we wrote this because Jira-issue:ABC-123" links as part of the docs.
