I currently have an Issue Collector setup and when used it inserts a label "collector-8f47a897" (which I assume is used to track metrics) is there any way to disable that so my tickets do not get that label?

Just remove the label field in your JIRA project's "Create/View" screen scheme.
Note: You are correct. This labels are being used for the chart/metrics in the Issue Collector admin preview page.
