Can Epic Bar Colors be changed in Classic Jira Cloud Projects with Premium Subscription

There's a color by picklist and the values include status but this is limiting.  Next-Gen allowed you to change bar colors very easily.

This is the simple roadmap on a classic project. You can enable it from the board configuration of your project.

But I believe you might be referring to advanced roadmaps in the premium plan. The coloring options there are different indeed. If you color by status, you don't get to choose as the color is inherited from the system colors for status categories. Basically these are:

• grey for to do statuses
• blue for in progress statuses
• green for done statuses

But you can also choose your colours based on other options like component, label or team. In those cases, you can define colours yourself in view settings:
