I have been looking at multiple posts and have yet to find a solution to bulk delete project in Next Gen cloud instance. Any suggestions.

There is no out-of-the-box Jira functionality that allows you to Bulk delete projects, unfortunately.
We use an add-on called 'Optimizer for Jira'. This allows you to bulk delete projects, as well other things like identifying unused or rarely used Jira Projects and other configurations (Fields, Issue Types, Workflows, Filters etc.) and bulk delete them with ease. Perhaps this may (or may not) be of interest to you.

You could implement your own solution using the JIRA Rest API

Sorry, bulk delete of projects isn't possible now.
