Our company is using application links (creating issues from our application in JIRA onCloud via REST API).

The default issue types we have used till now was "Task", but recently we have a lot of tickets from our customers about failures in issue creation. As I understood the reason is that there is no global issue type "Task" anymore.

Is there is no backward compatibility for JIRA Rest Api in your new versions?

This is not about backwards compatibility, it's about the configuration of your system.

You have removed "task" as an issue type from the project(s) that your customers are using.  Add it back, and it will work again.

This type was created automatically in the past for all projects, it doesn't happen now.

Our customers don't remove this type, it doesn't exist in a project issue types from the creation of the project.

These types are created:

Then you need to add it for them when creating new projects.

The defaults for JIRA project creation have changed, you need to adapt your processes to deal with the changes.
