However, when I select the "Category" field in Automations, the dropdown shows different values than what appears in my Lists/Boards.
When I choose a random Category to test, it also gives an error saying the Category can't be found.

That Category field is the project Category, not the Category field used in Business projects. That field is not available for use in Automation rules.
Interesting, thanks for the context. Do you have any ideas for workarounds? Is there any way to use automations to organize a task into a Category field?
