I’m really hope I didn’t just advocate for Jira and it can’t do the simplest thing :( I just want to be able to select a feature as a parent of a story. My hierarchy in my settings correctly has the Epic-Feature-Story structure but it’s still not letting me do it at a story level. Really hoping I’m missing something as this is a big issue
Nope, renaiming it wont work...i just wanted to show you that you should update the work type subsequently you should update the level name as well...which will indicate their names as well.

Actually, the problem is with your work type hierarchy, if you want to see Story as a child of Feature (Feature as a Prent of Story) then you need to update your work type hierarchy.
If you see, in your hierarchy, at the TOP (level 3) Story work type have been selected that means your current hierarchy is Story --> Feature --> Epic --> Task/Bug etc
And you want to see Like Epic --> Feature --> Story/Task/Bug etc then make sure you should select Epic as a Level 2 and Feature on Level 1. Rest story/Task/Bug and other standard work type are on the same level so you dont need to ay any level for them.
NOTE: As its a global entity and making any changes in the hierachy will impact on all the project availble on the site. so, please check with the project leads/ site-admins or whoever responsible for the decision making and then do the changes.

I see you updated the hirrarchy, but the Epic should be on Level 2 and Feature on Level 1.

The level numbers are not editable fields. Just the level name. And there’s no dragging capability to adjust order. So how to do this….?

You dont need to update the level numbers, the important part is work type ...so make sure Epic should be selected on the TOP level ie. on level 2 and Feature work type should be selcted on the level 1.

Yes, that is expected. Again wanted you to make sure that this changes will imapct on your all the projects on the site.
As i dont see any other work types in your system...what you can do is create a new dummy work type with any name like Epic_dummy then select this newly created work type with Epic with this change you have two work types on the level 1 ie Epic and Epic_dummy. so move all the issues from Epic to Epic_dummy (using the Bulk update) with this whole activity Epic work type is FREE to use in another level.
Now you can select the Epic work type in the level 2 with Feature (with this change, so on level 2 you should have Feature and Epic work types) and then move all the Features to Epic using bulk update, with this Feature will be FREE to use in another level.
Next, select the Feature on the Level 1 with Epic_dummy ( Feature and Epic_dummy on the same level 1). Move all the work items from Epic_dummy to Feature using bulk update.
ANd finally REMOVE the EPIC_DUMMY from the level 1 as well as DELETE it from work type.

I am very sorry to hear that, i think you are not well aware of how jira and its work items work entirely.
To do the bulk update you must need to add Epic_dummy work type in to the project and work type scheme then only you will be able to see and select.
BTW, this is community forum to help the people and they can do rest themselves, but in this case, i see i need to share basics as well which is not possible.
So, please take help from any senior consultant from your organization.

There are many people asking about this same functionality so there is nothing “basic” about my request. Obviously this functionality isn’t intuitive. I know the basics of Jira, thank you.

Just a correction - based on my actual testing of work item hierarchy adjustments Jira doesn't allow you to deselect the native Epic type at level 1, which would be a prerequisite to moving it to level 2. This is true even if you add another work item type to level 1 first.
The built-in Epic work item type is locked to level 1 and cannot be moved to another level.
