Assign To Me Gadget only "Unresolved"

Is possible for us to edit the results returned for the Assigned to Me gadget? Instead of returning Unresolved issues we would prefer it show any issue that is not Closed.

No. But you can replace it with the filter gadget and use a query like

assignee = currentUser() AND NOT status = closed

as filter.

The Assigned to Me gadget does not have a customizable JQL query for searching.

You can use the Filter Results gadget with a custom filter that includes all the issues you would want.
