I would like to see a summary progress bar on epic cards on my Kanban board that reflect the number of stories (child issues) that have been completed per epic.
This already exists within an epic for child issues, where it shows a green bar and % completed.
I tried added the "progress" field to the card layout but that isn't accurate and mostly does not display.

The Progress fields relate only to Time information for the issue, not number of child issues.
There is no native functionality to do what you want. There is a very old change request for it here:

In the Epic Panel on the Backlog screen in Company Managed project boards there is a Progress bar. If you hover over it you will see the percent complete based on the Estimation Statistic you have chosen for the board. If you had the Estimation Statistic set to Issue Count, you would get the percentage you desire, but that would also affect your burndown charts.
In a Team Managed project board there is also a progress bar in the Epic Panel, but hovering over it doesn't show the percentage.
You could work around this lack of functionality in a Company Managed project and display a number for percent of child issues completed by creating a custom field to hold that value and then using an Automation Rule to recalculate that value. You could then add that field to the card layout.
Yes, and...to Trudy's answer:
With an automation rule and custom field, you could simulate a progress bar...However with the resizable nature of board elements that may not lead to a consistent bar size display.
