I have used a Sales Template and I want to rename the columns. How do I do that? I was given the permission to be an org admin but I still cant rename the column.
I'd strongly recommend reading the release notes for each version (5.2, 6.0, but you can skim the point releases as they're generally minor tweaks and bug fixes), and testing the process several times, but yes, your upgrade plan can be as simple as:

we intend to trial the upgrade on a 'Development' server first, then repeat the process on our Prod system out of hours.
But yes I will be taking your suggestion to do that trial a few times over !
