Multiple Customer Implementations

I am very new in JIRA and I need some guidance. We use the Cloud version of JIRA.

Our team works on implementation of new customers - preparing them for go-live with a cloud-based software program.

Engineering works in sprints and have their own projects, but the implementation team just needs to follow tasks within several epics for multiple customers at one time - we don't need sprints.

I know how to set up a project with a board that contains epics and issues. What I am trying to do is three things:

  1. We would like to have one Implementation project but have each customer with its own board in the project.
  2. We would like to add sub-tasks or additional issues that can be assigned under an issue.
  3. We would also like to duplicate the epics and issues from a template as they are always the same for each new customer.

I am trying to use the next-gen projects to make use of the Roadmap.

Can someone lay out the best way to accomplish this?
