We want a single task to show up on 2 different projects, and when any update is made to that task (status, comments, attachments, etc.) in either project, it is reflected it both places. How can this be accomplished in Jira Next-gen projects?

It is possible to display the same task in two different projects by sharing the same issue with their respective board filters, however, Next-gen projects do not allow you to customize your board filter, although we understand this would be a useful feature to have.
That being said, we created the following feature request to allow this customization for Next-gen projects:
Ability to configure board filters for next gen project
Feel free to vote and watch the suggestion to increase its priority and also receive notifications about any updates.
For now, if you really need this functionality, I suggest you create two new classic projects and migrate your next-gen issues. Them, under Board settings > General, edit the board filter to display some specific issues in both projects.
