Hi,
I think I know the answer but it would be useful to confirm.
We don't appear to have the same issue field options available to us in our next-gen software project as we do in our non next-gen software project. I'm assuming this is done to simplify the overhead in setting up new projects in Jira with next-gen? (works for us)!
Is there a forum/way for us to add enhancement suggestions for next gen?

Next-gen are independent projects, so it's not possible to use custom fields created for classic ones.
You are correct about simplifying new project! The next-gen was created to be more simple with fewer features to help teams to create SW projects faster and also for those teams that don't need all features that classic project has.
Related to more custom fields for next-gen, we have a feature request suggesting this:
