I'm trying to add Post functions to my statuses to clear the Resolution field and status of Jira issues. Previously I only thought to clear the "Resolution" field, however I noticed when I started typing to filter down to "Resolution", that another field, "Resolved", also appeared. I'm confused as to what clearing that field would do if I'm already clearing the Resolution, and changing the status from Closed to something else. So, before I potentially do any damage to my Service Desk project I'd like to know whether clearing the "Resolved" field and the "Resolution" field would have a different result or added benefit vs simply clearing the "Resolution" field.

You just need to clear the value of "Resolution" field and remove the postfunction for clearing the "Resolved" field which holds the time when the issue was resolved. Please take a look at this page to understand the difference between the Resolution and Resolved field.
AFAIK, you cannot clear the Resolved field, not sure however if it can be cleared automatically when clearing Resolution, I'm curious to know if this is true.

You are right @said kouzibry "Resolved" is a system field which is automatically updated once the issue is marked as done and so cannot be cleared unless you have access to the Database.
