When creating an issue, the for a company-managed project, all the 58 values are displayed in a custom field dropdown, but when editing an issue only 50 values are displayed in the same custom field dropdown. Is there a limit on the number of values displayed for a custom field dropdown once an issue has been created?

Based on the following change request, it seems like the list should display up to 100 entries.

I understand that Atlassian presents a truncated list to ensure better UI performance, you should have an option to start typing in an entry to filter the list and get matches that are not currently in the default visible list.

Have you tried typing the entry you want, and does that filter the list to display entries that are not initially displayed?

I did my own test with a selection list that has more than 50 options, and I had the same experience. In the Create Issue dialog all the options displayed but in the Edit/View screen only 50 displayed.
If the workaround of typing in part of the option you want as a means to filter the list is not acceptable, I suggest that you open a support case directly with Atlassian to find out if they changed the limit from 100 to 50 for the view/edit screen.
If you choose to do that, please share here what you learn from them.

Just FYI we recently experienced the exact same issue. We have a custom dropdown field with 58 values. All values are displayed on the issue create screen but only 50 are displayed on the issue edit screen.
The typing in part of the option you want does work as a filter, but IMHO it is not a long term solution.
