You can add statuses in Team Managed projects as well. See This support article for more details on how to do this.
It is good to know that statuses in a team managed project belong to that project only. So you can't add a status from the centrally managed statuses you use for company managed projects.

ok, thank you for insight. However, i wanna modify the workflow, by adding a nes status(In test)...but it looks to me like I could just add this specific status:
To do
In progress
Complete...

There is no reason why you shouldn't be able to add a status with any status name you want, given you have the right permissions to do so and if you are doing so in the right place.
Can you share a screenshot and a bit more context on what you are trying to do exactly and where you are in the product?

ok, i am on team managed project also I added few issues . I dont know how to add new status other than the standard ones. when i edit workflow. Attached there is a screenshoot:

Ok ☺️ - I see where you are confused. Any status in Jira has a name, but also a status category. That is what Da fare (to do), In corso (In Progress) and Completato (Done) represent.
Usually, when people want to add a new status to a workflow, that will be an in progress status. When you click on Add In Progress status, a popup will appear where you can enter the name of the status you want. If it is a new status, it will just be created. If you choose in progress, that status will be blue, but it will have the name you choose.
