I'm trying to edit a workflow so it unassigns a user during specific status transitions. Unfortunately I can't seem to add any post functions. Is there anything I am missing? I think I should have the necessary permissions, since I can add, modify and remove any statuses and transitions.

You need a Jira administrator permission to add post functions. I believe that you are have only a project Administrator permission.

Post Function should not be an admin level item. There's already problems with too many 'admins' in any Jira instance, yet plenty of project leads that need to manage the project, product or team in the way they need to do so.
Also, going through an admin when you yourself are the actual administrator for said project, product or team is just more overhead nonsense.
It also limits experimentation for new teams trying to find their feet. Every change to basic workflows (team-centric workflows) needs an admin to step in. If there's another way to go about tailoring a team workflow without an admin's intervention that would be helpful.
