when I click on a sub-task issue type and click on the icon, it does not give me the option to change it to a different issue type i.e task
This is what the hierachy on our side is set-up. I am too scared to make changes and is uncertain what the correct hierachy should be.
Please help!
You could change it to another sub issues type, but not to a higher level issue type, then you would 1st need to convert the issue to that level, then you could set a different issue type.
Then still conditions apply that the other issue type you want to switch to uses the exact same workflow.
Thank you for the prompt response. I do believe my issue is the way the hierachy is currently set-up.
I have read about the recommendations but I am not 100% sure what they should be as I have about 6 different issue types, in addition to the task, story and sub-tasks. I am having trouble adding the hierachy view in this chat though. I am not sure what level they should be and how that matters and how it could potentially impact all existing tickets.
I have about 9 JIRA projects

The default hierarchy in Jira is Epic - Story level (includes all default issue types) - Sub-task (includes all sub-task level issue types)
See example to change sub-task level to Story level
