When editing multiple issues via a Bulk Change, is there a way to add watchers other than yourself ?

When editing multiple issues via a Bulk Change, the Watchers field is not in the list of editable fields. 

Also, within Bulk Change, WATCH ISSUE only allows you to watch the issue. 

Is there a way to enable the Watchers field for the Bulk Change operation?

Welcome to the Atlassian Community.

Unfortunately, the bulk change function does not offer the option to add watchers to multiple issues at once. Nonetheless, you can support a feature request on the Atlassian public issue tracker by voting for it and adding yourself as a watcher to stay informed of any updates. Alternatively, Automation for Jira may be a viable solution, as recommended in one of the comments.
