I recently noticed that a new button "Start stand-up" has shown up beside the "Complete sprint" button on our board. I can't find any documentation on what this button does. I don't want to press it until I know what exactly this button is supposed to do. Where can I find the documentation for this?

I recommend everyone on a paid license submit a support ticket to Atlassian to disable this feature, or at least deploy in "off" state with a project-specific and / or site-wide option to enable it.
For those not on a paid license, use the "Give feedback about Jira" option, available from the question mark at the top-right side of the pages.
Similar, recently added features, such as the canned comment text, have no disable option, and require contacting the support team to disable them during the experimentation / rollout period. Community questions about feature, disable options for free license customers yield often unhelpful ideas from Atlassian staff. And after that rollout period, some of those features are just "stuck on", with no ability to remove them.
I wonder if features like this are "smells" of some type of problem in product management, such as not discussing with actual agile practitioners the impact of such features, or targeting features for a small subset of higher-license level customers' wants.

Thanks @Max - Swift Checklist Dev weird that this post didn't show up in my search which I had done just before posting this question.
I don't know how anyone else feels about the feature but it has no use for my company. I don't know why I would click on a team member's name in this new popup and have a timer. I can see everyone in the board and who is working on what and I have no need for a timer. It is not the end of the world if a team member talking about their issue goes over 2 minutes, at least not for the way we run our stand ups. We usually don't go over our allocated stand up meeting (normally 10-15 minutes) time.
I agree with @Bill Sheboy that this feature perhaps should not be enabled by default but then again, we don't have a dedicated person in our team to go over any new features in Jira so not sure...

@Max - Swift Checklist Dev on this new feature we noticed that there are missing people that do not appear when selecting "Start stand-up" button. The number of tickets displayed correspond to what is in current sprint, but just for some strange reason 3 assignees names do not show up? How can I get it to display the missing people thanks.

This might be a great idea for some teams, but this does not even come close to aligning with how we handle standup for our COMPANY, not just my teams. We are a Kanban organization, and this new feechur does not do anything except confuse the UI and needlessly call our practices into question. While I could see this to maybe be a valuable option for some teams, this is a feechur we will likely never employ.
There needs to be a DISABLE option for this in the board settings.
