I am right now testing a JIRA setup for our organization. So far everything including LDAP connection and SSO works fine. I am now trying to move issues from my service desk to another simple project I set up. In the move-issue wizard I am not able to select the new category from the new project as task type.
How do I do this?
I'm not quite sure what you mean by "select the new category from the new project as task type".
In general you should be able to select all issue types that have been configured in the issue type scheme of the target project... Might be worth looking at the scheme:

I tried to move the issue and get an error handle. I already tried to add the missing types to the helpdek scheme with the effect that I could convert a ticket to a subtask. but this is not exactly what I am looking for. Hope you are able to help me.
Interesting... The missing type would have to be added to the scheme which is associated with your IT-Projekte (ITP) project. If moving is still an issue try to move a single issue as a bulk move.
