Stories with Status'Accepted' is populated under In progress category in the Releases. This is showing the accepted stories are still in progress count.

Every Status is assigned to a Status Category. There are three Status Categories and they are color coded:

What is the lozenge color for the "Accepted" status value? If it is blue, that means it is assigned to the "In Progress" status category, and issues in that status will be counted in the "In Progress" grouping for the Release.

The color cannot be changed except by changing the Status Category to which the Status value is assigned.
Are you working with a Team Managed project or a Company Managed project? Get that information from the View All Progects page under the Projects menu.
For a Team Managed project a user assigned to the Administrator role of the project will be able to change the Status Category to which a Status is assigned, but editing the workflow, selecting the Status value and changing the Status Category.
For a Company Managed project the change can be made only by a Jira Administrator and from the Settings > Issues > Statuses screen. That change will affect all projects that use the Status within their workflows and can impact reports and search results.
