I’ve been researching your requirements to provide you with any open Feature Requests we have.

Feature Request: Allow Custom fields to be added to Jira and JSD User Accounts:

• JSDSERVER-2369

For your other requirements regarding export, etc. of course, this will be something considered should the custom fields feature be implemented.

I would recommend commenting on the request above with your PDF that you created but also your requirements in text form so it will be easily found should someone try to search for the same feature.
