I don't think there's a PDF version of Jira end-user guide. However, there are numerous resources related to getting started with Jira, such as:

• Get Started with Jira - Comprehensive Beginner's Guide 
• Get the most out of Jira | Atlassian University 
• Jira tutorials: Learn agile with Jira
• ... and many more

We (internally) prefer using official links and materials, but if PDF versions are required, scraping data/copy&paste and then creating a PDF document would be a way to go.
