In our Jira implementation we work with a self made workflow.
I see Jira collects the time between each transition, who excuted the transition, the number of times a transition was executed and so on.
I want to make reports on this information, but i don't find this information.

Just answered a similar question here. You can create custom fields as per your requirements and script it to return the right data.
Jira Cloud users need an add-on to calculate the time spent between each transition in the workflow. For example one of newest is "Time in Status for Jira Cloud". It allows to measure the time issue spent in a specific status and еxport that data to XLS or CSV (analyze it using Excel or Google Spreadsheets)
Highly recommend to try it.
