Can I reorder or hide the resolutions?

I didn't set up Jira, I am only working with it (as admin).

There is a project "IT tasks" with issue type "task."

As resolution, I usually use Done, won't do, fixed, Won't Fix, in that order.

I have got the options

Fixed
Won't Fix
Duplicate
Incomplete
Cannot Reproduce
Created
Checked
Done
Won't Do
Fertig
Reicht nicht
Duplikat
Kann nicht reproduziert werden

so that I almost always have to click and choose "Done".

Is it possible to hide the unneeded options and to reorder the rest?

Yes this can be done using property keys on the transition.  Here's an article that explains it:
