Till now I loggen in into Bitbucket, Jira and so on with my Google account. I'm planning to delete that Google account. Can anyone tell me how I can change my login at Bitbucket, Jira so that it no longer used the Google login?

Go to id.atlassian.com and change your email address. Now if your Jira instance has the domain verified then your admin would change for you.
