Moving from On-Demand to On-Site

We are currently using JIRA, Confluence, Bonfire and Greenhopper on Demand and are thinking of changing to downloading it on our site so that we can use Zephyr with JIRA. How difficult is this to do and can we do it without loosing any of our data?

In general, our goal is to make it as turnkey and painless as possible - whether you move your data in-house, or direct-managed hosting (also provides a 24x7 monitored no headache solution - yet you can have plugins).
