I have a team who enjoys using list view in Jira software, however I would like to change which fields are visible in the list view for everyone in the project and not just me, is this possible?

Currently, list views are only configurable 'per user'. Here's a feature suggestion for project admins to be able to configure the view for everyone within the project: JWMCLOUD-98 - Ability to set default List view columns, controlled by admin of each project

Just to add to Tomislav's answer: If you're looking for an immediate resolution and are open to solutions from the Atlassian Marketplace, you may want to have a look at the app that my team and I are working on, JXL for Jira.
JXL is a full-fledged spreadsheet/table view for your issues that allows viewing, inline-editing, sorting, and filtering by all your issue fields, much like you’d do in e.g. Excel or Google Sheets. It also comes with a range of advanced features - including support for (configurable) issue hierarchies, issue grouping by any issue field(s), sum-ups, or conditional formatting - and works across any number of projects.
Plus, any changes that you make to the fields of your view are, by default, shared with all your team members!
