We are setting up a new Jira instance and we would like to know if there is any advantage when using one or the other between MySQL and PostgreSQL databases.

No really large advantage to using either of them. I've used both quite happily, and would recommend them over MS-SQL instantly (and Oracle, but to a much lesser extent - Oracle works, but does need a bit more TLC than MySQL or PostgreSQL).

The right answer is "whichever one you prefer". If you don't have a strong preference and want someone else to make the decision for you, then go with PostgreSQL because that's what Atlassian recommend, use, and code for first. I personally have a slight preference for PostgreSQL because I found setting up PostgreSQL a lot easier than MySQL.

PostgreSQL - we started with MySQL a long time ago and switched over many years ago. Very stable and has the best Atlassian support. They recommend it if you don't have some other preference.
