Jira allow just one option from checkboxes to be selected

Hi,

I have a custom field with 3 different options as checkboxes - how do I restrict users to just be able to check one of the checkboxes and not all as it is by default?

Any reason why you can't use Radio Buttons?  Because that will give you what you want.
